Cannabis infused zucchini muffins are easy to make. My marijuana version is loaded with nutrition so I feel good about eating it.
Mix the batter and plop it into a greased loaf pan or muffin tin. An hour or so later (or when they’re cooked through) you’ll have the heartiest, most beautiful healthy cannabis-infused breakfast.
3 Cups Shredded Zucchini
1 cup milk
1 tablespoon Strength of the Hills, Apple Cider Vinegar*
2 teaspoons Cinnamon
1 teaspoon Salt
1 teaspoon Vanilla
1/3 cup Coconut Sugar
6.5 tablespoons Melted Cannabis-Butter
1/4 cup Applesauce
1.5 cup Whole Wheat Flour
1/2 cup Almond Meal
1/2 cup Flax Meal
1/2 cup Steel Cut Oats
1/2 cup Dried Cranberries
1/3 cup Chopped Nuts
1/4 cup Chopped Dates
1/4 cup Chia Seeds
**Mix the milk and vinegar together and let sit for five minutes.** Note: You can use any type of vinegar, but Strength of the Hills has a lot of added flavor that I love in this recipe.
Combine all ingredients and mix well.
Grease pan well or use muffin liners.
Bake at 350 for 15-20 mins or until cooked through.
